So this morning I made a gluten free German Pancake with Plums:
To peel the plums, slice x's in both ends and drop into boiling water for 60 seconds then rinse under cold water and peel.
14 small plums, peeled and sliced
3 tbsp mascobado, divided
1 tsp cinnamon
2 tbsp coconut oil
3 eggs
1/2 cup milk
1/2 cup all purpose gluten free flour
1/4 tsp sea salt
1/2 tsp vanilla
Preheat oven to 425 place coconut oil in a skillet in the oven till oil melts. Toss plum slices with 2 tbsp mascobado and cinnamon. Swirl in skillet with melted coconut oil. Place eggs, milk, flour, salt, and vanilla in vitamix then pour over plums. Bake for 25 minutes.
This was just taste-tasted by a culinary expert. Me.
